Ham, Broccoli, and Cheddar Breakfast Muffin Cups

These ham, broccoli, and cheddar breakfast muffin cups are the perfect breakfast recipe for busy mornings - savory, filling, and so delicious!

Ingredients

  • 1 cup ham cubed
  • 1 cup broccoli florets cut small
  • 1/8 cup red onion finely diced
  • 1/2 yellow pepper diced
  • 2 cups cheddar shredded
  • 1 teaspoon italian herb mix
  • salt and pepper to taste
  • 5 eggs beaten
  • 2 tablespoons milk

Instructions

  • Preheat the oven to 350 degrees and prepare a 6-cup muffin tin with cooking spray.
  • In a mixing bowl, mix together the ham, broccoli, onion, and half of the cheese. Divide the contents into the muffin tins.
  • In another bowl, mix together the eggs, milk, italian herbs, salt, and pepper. Carefully divide and pour the egg mixture into the muffin tin.
  • Sprinkle the remaining cheese on top of the muffins and bake for approximately 20-25 minutes or until the cheese is melted on top and a toothpick comes out clean.
  • Serve and enjoy!

Notes

These freeze very well so you can make ahead and then quickly microwave to heat up on busy mornings!
