Lemon Pound Cake Cookies

Lemon Pound Cake Cookies have all the delicious flavors of a pound cake in a cookie. They are a chewy, and light, perfectly lemony cookies that start with a boxed cake mix.

Ingredients

  • 1 box lemon pound cake
  • 1 to 2 tsp lemon extract
  • 1 large egg
  • 1 half stick of softened butter

Glaze (If your pound cake did not come with a packet):

  • 1 cup powdered sugar
  • 2 to 3 tbsp water or milk
  • 1 tsp lemon extract
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 375. 
  •  In your stand mixer, add pound cake box mix.
  • Add egg then add butter. Mix with paddle for 1-2 minutes.
  • Roll 1” balls of dough and place on cookie sheet with baking mat or parchment paper. 
  • Using a small glass, dip into powdered sugar and press down on dough to flatten slightly.
  • Bake cookies for 8 minutes. Remove from oven and cool on baking rack.
  • Mix glaze according to package directions. If you do not have a package, add powdered sugar, milk and extracts into a small bowl. Whisk until smooth. Drizzle onto cookies.
