Lemon Pound Cake Cookies have all the delicious flavors of a pound cake in a cookie. They are a chewy, and light, perfectly lemony cookies that start with a boxed cake mix.
Cake mixes aren't just for making cakes. They make great cookies to! And there are so many flavor combinations you can choose from. Strawberry, lemon and chocolate are three of my favorites.
Baking doesn't have to be hard or complicated. Sometimes it's okay to take some shortcuts to save time. You still get the delicious lemon flavor in a soft, chewy cookie that is so good!
Lemon Pound Cake Cookies
These Lemon Pound Cake Cookies are quick and easy to prepare and are perfect when you need something sweet but don't have a lot of time.
Lemon Pound Cake Cookies Ingredients
1 box lemon pound cake. You can also use a plain pound cake too.
1-2 teaspoons lemon extract
1 large egg
1 half stick of softened butter
Glaze Recipe (If your pound cake did not come with a packet):
1 cup powdered sugar
2-3 tablespoons water or milk
1 teaspoon lemon extract
1 teaspoon vanilla extract
How To Make Lemon Pound Cake Cookies
Preheat oven to 375. In your stand mixer, add pound cake box mix.
Add egg then add butter. Mix with paddle for 1-2 minutes.
Roll 1” balls of dough and place on cookie sheet with baking mat or parchment paper. Using a small glass, dip into powdered sugar and press down on dough to flatten slightly.
Bake cookies for 8 minutes. Remove from oven and cool on baking rack. Mix glaze according to package directions. If you do not have a package, add powdered sugar, milk and extracts into a small bowl. Whisk until smooth. Drizzle onto cookies.

Excellent, and I am usually a "cookies must have chocolate" purist. The resident chief baker states they came out flatter than he wanted, but I disagree.
