Instant Pot Pasta Fagioli Soup is a classic comforting Italian soup packed with healthy vegetables, beans and pasta. It's one of our favorite Instant Pot pressure cooker dinner recipes!
Instant Pot Pasta Fagioli Soup comes out perfectly cooked in the pressure cooker. I'm a big fan of my Instant Pot. It's such a time saver and has so many functions that makes it one of my most used appliances in the kitchen.
Instant Pot Pasta Fagioli Soup
I can eat soup year round. It's great in the summer with fresh vegetables straight out of the garden. It's great served with a tossed salad and crusty bread or bread sticks.
Soup and salad is one of my favorite combinations to order for lunch when we get to dine out. Especially at Olive Garden. I love their Pasta Fagioli Soup and that is what inspired this Instant Pot Pasta Fagioli Soup recipe.
During the Fall and Winter months I cook soup at least one a week. It's an easy meal and we usually have leftovers for lunch the next day which is a huge bonus for me!
Instant Pot Pasta Fagioli Soup Ingredients
1 pound of lean ground beef
2 tablespoons of extra virgin olive oil
1 tablespoon minced garlic
1 small diced onion
3 cups beef broth or stock
1 cup tomato sauce or tomato soup
1 cup chopped celery
1 cup diced red bell pepper
1 cup diced yellow or orange bell pepper
2 cups chopped carrots
1 can of kidney beans rinsed and drained
1 cup Ditalini pasta
1 tablespoon of Italian seasoning
1 teaspoon salt and pepper
How To Make Instant Pot Pasta Fagioli Soup
Set Instant pot to sauté function. Add olive oil, garlic and onion. Cook until garlic is fragrant, and onion is translucent; about 2 minutes.
Next add the ground beef and cook until no longer pink, stirring regularly. Drain grease and return to pot.
Add in tomato sauce or soup and broth. Then add the celery, carrots, and peppers. Add beans and pasta to mixture.
Add seasonings and mix everything together.
Press the Cancel button to turn off the Sauté mode. Put the lid on and lock. Set the steam release knob to the Sealing position. Make sure venting is off. Set Instant Pot to high pressure and set cook time for 15 minutes.
When timer goes off, allow to vent naturally for 15 minutes. Then do quick release of any remaining pressure. Garnish with Parmesan cheese or your favorite toppings.
