One Pot Chicken Teriyaki Rice Bowls

Better than takeout one pot chicken teriyaki rice bowls are the quickest and easiest meal for those busy nights when you don't have much time. Everything cooks in one pot for easy cleanup!

Ingredients

  • 2 boneless skinless chicken breasts, cubed
  • 3 tbsp teriyaki sauce
  • 2 cups long grain white rice, uncooked
  • 1/4 cup teriyaki sauce
  • 3 tbsp soy sauce
  • 1/2 cup carrots, chopped
  • 1/2 cup green onion
  • 1/3 cup peas
  • 1 cup Broccoli
  • 3 1/2 cups water

Instructions

  • Cook cubed chicken in 3 tablespoons of teriyaki sauce in a large skillet over medium-high heat.
  • Add the rest of the ingredients minus the broccoli, and bring to a boil.
  • Reduce heat, cover and simmer for 20 minutes or until almost all of the water is absorbed.
  • Add broccoli and cover for 5 more minutes.
  • Serve immediately.
