- 2 cups rolled oats
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon ground cloves
- 1 egg
- ½ teaspoon vanilla extract
- 2 Tablespoons melted butter (or oil)
- 2 cups milk
- ⅓ cup pecans (chopped)
- 1 cup diced peaches
- 1 cup sliced peaches
Preheat oven to 350ºF.
Combine rolled oats, brown sugar, cinnamon, and cloves in a large bowl.
Make a well in the center of the ingredients and add egg, whisking lightly.
Add vanilla, oil, and milk and stir together.
Stir in chopped pecans and diced peaches. Stir to combine.
Pour into a greased 8x8-inch pan.
Top with sliced peaches.
Bake in preheated oven for 35 minutes, until center is set.
Store leftover oatmeal in the refrigerator in an airtight container. It will keep for up to 3 days in the fridge.
