Peach Baked Oatmeal Recipe

This Peach Baked Oatmeal is a delicious breakfast treat with a golden-brown crust, sweet peaches, and chopped pecans for a little crunch.

Ingredients

  • 2 cups rolled oats
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • 1 egg
  • ½ teaspoon vanilla extract
  • 2 Tablespoons melted butter (or oil)
  • 2 cups milk
  • cup pecans (chopped)
  • 1 cup diced peaches
  • 1 cup sliced peaches

Instructions

  • Preheat oven to 350ºF.
  • Combine rolled oats, brown sugar, cinnamon, and cloves in a large bowl.
  • Make a well in the center of the ingredients and add egg, whisking lightly.
  • Add vanilla, oil, and milk and stir together.
  • Stir in chopped pecans and diced peaches. Stir to combine.
  • Pour into a greased 8x8-inch pan.
  • Top with sliced peaches.
  • Bake in preheated oven for 35 minutes, until center is set.

Notes

Store leftover oatmeal in the refrigerator in an airtight container. It will keep for up to 3 days in the fridge.
