I love this Peach Baked Oatmeal, especially when fresh peaches are in season! The combo of oats, brown sugar, and cinnamon is the perfect flavor. I like to add in a pinch of ground cloves for that extra warmth.

One thing I like about the baked oatmeal is how easy it is to make ahead. Pop it in the oven in the morning, and you've got a delicious, no-fuss breakfast.

You can serve it on its own, or with a dollop of whipped cream to make it extra indulgent. It goes perfectly with a cup of hot coffee or a glass of cold milk.

Ingredients to make peach baked oatmeal are set out on the counter.
  • Rolled Oats: The hearty base, giving the dish that satisfying, chewy texture.
  • Brown Sugar: Adds a sweet, caramel-like richness to the oats.
  • Cinnamon: Infuses a warm, comforting flavor.
  • Ground Cloves: Add a bit more warmth to the baked oatmeal.
  • Egg: Binds everything together, making the oats firm yet tender.
  • Vanilla Extract: Adds a bit of sweetness to the flavors.
  • Melted Butter: Brings a buttery richness to the peach baked oatmeal.
  • Milk: Creates a creamy consistency, making the baked oatmeal lusciously moist.
  • Pecans: Chopped pecans add a delightful crunch, balancing the textures.
  • Peaches: Chopped and sliced peaches infuse a juicy, fruity sweetness, giving each bite a burst of flavor.

How To Make Peach Baked Oatmeal

Start by preheating your oven to 350ºF.

Vanilla, oil, and milk are added to the oats mixture in the mixing bowl.

In a mixing bowl, combine the rolled oats, brown sugar, cinnamon, and a pinch of ground cloves.

Next, make a well in the center and crack in the egg, giving it a light whisk. Add in the vanilla extract, melted butter, and milk, giving it a good stir. This combo is what makes your oatmeal creamy and flavorful.

Grease your 8x8-inch pan and pour in the oatmeal mix. Top it off with those juicy sliced peaches.

Place it into the preheated oven and let it cook for about 35 minutes. You'll know it's ready when it's set in the center.

Once it's out of the oven, let it cool for a bit, and then enjoy. It will disappear fast!

Baked Oatmeal Variations

  • Change up the nuts. Swap pecans for almonds or walnuts for a different crunch.
  • Add berries. Add a handful of blueberries or raspberries for a fruity explosion.
  • Make it dairy-free. Use almond milk or coconut milk instead of regular milk for a subtle flavor twist.

Can I use quick oats instead of rolled oats?

No, it's recommended to stick with rolled oats for this recipe. Quick oats may lead to a mushier texture, affecting the overall consistency of the baked oatmeal.

Can I use frozen peaches instead of fresh peaches?

Yes, frozen peaches work well. Thaw them slightly before chopping and include any released juices in the mix for added flavor.

Can I reduce the sugar content?

Absolutely. Feel free to adjust the brown sugar quantity to your taste preference or explore alternatives like maple syrup or honey.

Make Ahead, Storing and Freezing

Make Ahead: To prep the Peach Baked Oatmeal the night before, follow all the steps until pouring it into the pan. Instead of baking, cover the pan and pop it in the fridge. In the morning, preheat the oven, top it with sliced peaches, and bake as usual.

Store: Store leftover oatmeal in the fridge in an airtight container. It will keep for 2-3 days in the refrigerator. To reheat, cover it with foil while the oven preheats to keep it moist. It's good to go in about 5 minutes.

Freeze: Want to freeze some for later? Cut it into individual portions, wrap in plastic wrap, then toss them in a freezer bag. It will keep in the freezer for up to 2 months. Thaw overnight in the fridge and warm in the oven when you're ready to enjoy it again.

Recipe Tips

  • If mornings are hectic, prep the dry ingredients the night before. It'll save you time and effort in the morning.
  • No fresh peaches? Frozen works too! Just thaw them a bit and chop.
  • If the center jiggles a lot, it needs more time. It should be set but still a bit moist. A toothpick should come out clean from the center.
  • Don't be afraid to add extras like a handful of berries or a sprinkle of shredded coconut. Make it your own!
