How to Make Chocolate Thin Mint Ice Cream


In a large mixing bowl, whip the heavy cream until it reaches stiff peaks. Add the sweetened condensed milk, vanilla extract, and cocoa powder and continue mixing until combined.

I like to move my finished thin mint ice cream to a plastic food storage container, but you can also continue to freeze it in your loaf pan. Just be sure that the opening of the pan is covered with two layers of plastic wrap to keep the oxygen out!

Recipe Tips
- Not a huge fan of chocolate? You can make this thin mint ice cream with a vanilla base instead. Simply omit the cocoa powder and voila! You’ve got an ice cream that’s sweet and minty, but not too fudgy.
- Once your heavy cream has been whipped to stiff peaks, be gentle with it. You don’t want to mix it too vigorously and knock all the air out. This will result in an ice cream that is dense and crumbly.
- Remember that fat doesn’t freeze! The high fat content in the heavy whipping cream and sweetened condensed milk is what helps to keep your finished ice cream smooth and scoopable. So, don’t be tempted to swap out either of these ingredients for a low-fat version.
- The exact amount of time your ice cream needs to freeze will depend on the temperature of your freezer. Some freezers will be done in 5 hours, and some need closer to 7. We like to let our ice cream freeze overnight when we have time.

Chocolate Thin Mint Ice Cream Recipe
Ingredients
- 2 cups heavy cream
- 14 ounce can sweetened condensed milk
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- 2 cups crushed thin mints
Instructions
- In a large mixing bowl, use an electric hand mixer to whip the cream for 3-5 minutes on high speed or until it reaches stiff peaks. You can also use a stand mixer.
- Once the cream begins to reach stiff peaks, add the condensed milk, vanilla, and cocoa powder. Start mixing the ingredients together on a low speed and gradually work your way up to a high speed until the cocoa powder is fully incorporated.
- Gently fold in the crushed thin mint cookies and then transfer your ice cream mixture to a 9x5 inch loaf pan. Cover the pan with plastic wrap and place it in the freezer for at least 6 hours or until the center of the ice cream is set.
- Serve and enjoy!
