Slow Cooker Pineapple Salsa Chicken

This easy three ingredient slow cooker pineapple salsa chicken takes just minutes to prepare and your family will love it!

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 can pineapple chunks, drained and juices reserved
  • 2 cups salsa
  • salt Seasonthe chicken thighs with salt and pepperand pepper to taste

Instructions

  • Season the chicken thighs with salt and pepper.
  • Place chicken thighs into the bottom of the slow cooker bowl.
  • Pour ¼ cup to ⅓ cup of the reserved pineapple juices over the chicken.
  • Cover and cook on low for 4 to 5 hours.
  • In a mixing bowl, add the salsa and the pineapple chunks. Stir until blended.
  • Pour mixture over the chicken thighs and replace the lid.
  • Cook for another hour on high.
  • Serve over rice and enjoy!

Notes

If you prefer, you can use pineapple juice instead of the reserved juices from the can.
Use whatever salsa you prefer. Pineapple or mango salsa would be very good, and feel free to use a mild, medium or spicy salsa if you like
