For The Cake
- 1 box chocolate cake mix
- 3 Tablespoons milk
- ¼ cup vegetable oil
- 2 large eggs
For Filling And Decorating
- 2 sticks butter, softened
- 4 cups confectioners’ sugar
- 5-7 Tablespoons milk
- 2 teaspoon vanilla
- Black decorating frosting
- 2 4 ounce orange fondant
Make The Cake
Use an hand held mixer or stand mixer to mix together the cake mix, milk, oil and eggs in a large bowl until blended. Don't overmix batter.
Use a 2-inch cookie scoop and place the scoops on your lined baking sheet, at least 1½ inches apart from each other.
Bake for 10 minutes. Remove from oven and allow to cool completely on wire rack.
Make the Buttercream Filling
With an electric mixer beat butter, confectioners’ sugar, milk and vanilla on medium speed. Gradually increase to high. The buttercream is ready once the filling is smooth and combined.
Use one bowl of buttercream as the filling of your whoopie pies. Use an offset spatula or piping bag to add buttercream on the backside of one cake and then top it with another cake.
With the remaining buttercream use a piping bag to frost the top of each whoopie pie, filling it out completely.
To make the snowmen’s "carrot" nose, shape your orange fondant into long, triangular shapes and place in the center of each frosted whoopie pie.
Use the black decorating frosting to make some eyes and a smile.
Serve and enjoy.
Yields: approximately 8-10 Whoopie pies.
How To Store: Wrap individually in plastic wrap and store in the refrigerator in an airtight container for up to 3 days. These are best served at room temperature.
