Spicy Slow Cooker Sausage, Bean And Pasta Soup

Ingredients

  • 10 ounce Package of Ditalini pasta (or any small pasta), cooked according to package directions
  • 12 ounce Package of smoked sausage, sliced
  • 2 garlic cloves, finely chopped
  • 1 tbsp olive oil
  • 3 cups chicken broth (add more depending on the consistency you want)
  • 1/2 cup chopped spicy pepperoncini peppers, seeded
  • 1/4 cup juice from pepperoncini jar
  • 1/4 cup Green Salsa Verde Sauce
  • 6 ounce can of tomato paste
  • 2 - 3 tbsp chili powder
  • 1 tbsp sriracha
  • 2 tbsp red pepper flakes
  • 15 ounce can black beans
  • 15 ounce spicy pinto beans, or whatever beans you have in the pantry

Instructions

  • In a medium skillet, add olive oil. Add sausage and brown on both sides. You do not need to cook through, just brown it. 
  • Add garlic and cook for about 1 minute. Set aside.
  • Add all your remaining ingredients to the slow cooker including the browned sausage. 
  • Stir until well blended.
  • Cook on low 3-4 hours.
