Ingredients

  • 32 ounce bag tater tots, cooked
  • 1 pound ground sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 large eggs
  • 1 cup sour cream
  • 2 cups Colby Jack cheese

Instructions

  • Begin by cooking your tater tots if you haven’t already. Set them aside.
  • Preheat your oven to 350°F.
  • While the oven preheats, cook the ground pork in a large pan or skillet until it is browned and cooked all the way through.
  • Add the diced bell peppers. Allow the peppers and sausage to cook for 3 minutes.
  • In a large bowl, whisk together the eggs, cheese, and sour cream until the eggs are fully beaten andt he mixture is combined.
  • Add the tater tots and sausage mixture. Mix again until the ingredients are evenly distributed.
