When I have a busy day and need a hearty breakfast this breakfast casserole gives me a well-rounded meal filled with protein, fiber, carbs, and fats. It's a favorite at our house along with this Meaty Breakfast Casserole.

It's perfect by itself but if you are feeling a little extra and want to serve this dish with some sides, we recommend pairing it with some fresh fruit, Bacon Cheddar Biscuits or Buttermilk Biscuits and maybe something sweet like these Chocolate Chip Scones or Cinnamon Crescent Rolls.

Recipe Tips

  • This casserole is best served fresh straight from the oven. Use a sharp knife to slice the casserole into squares, or scoop it with a spoon.
  • If you like a little more heat with your eggs, you can add a few drops of tabasco sauce to the egg mixture before adding the sausage and tater tots.
  • I used Colby jack cheese in this recipe. Feel free to swap it out for any other cheese that melts well such as mozzarella, cheddar, gouda, and pepper jack cheese.
  • I like to cook the frozen tater tots in the air fryer. Just follow the directions on the bag.

How to Store and Reheat Leftovers

Store any leftover breakfast casserole in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months.

How To Reheat: It is best to reheat this casserole in the microwave or in a 350°F oven.
