How to Make Tater Tot Breakfast Casserole With Sausage
Preheat your oven to 350°F. In a large pan over medium heat, cook the ground sausage until browned and crumbly.
Add the diced bell peppers and continue cooking until softened then remove from the heat and set aside.
In a large bowl, combine the eggs, Colby jack cheese, and sour cream. Whisk until thoroughly combined.
Add the cooked sausage, peppers and cooked tater tots to the egg mixture. Stir to combine, then transfer to a baking dish.
Bake until the eggs have set and the casserole has started to pull away from the sides of the dish. Serve hot and enjoy!

- 1 pound ground sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 6 large eggs
- 1 cup sour cream

- Begin by cooking your tater tots if you haven’t already. Set them aside.
- Preheat your oven to 350°F.
- While the oven preheats, cook the ground pork in a large pan or skillet until it is browned and cooked all the way through.
