When I have a busy day and need a hearty breakfast this breakfast casserole gives me a well-rounded meal filled with protein, fiber, carbs, and fats. It's a favorite at our house along with this Meaty Breakfast Casserole.

  • Colby Jack Cheese - Shredded.

How to Make Tater Tot Breakfast Casserole With Sausage

Preheat your oven to 350°F. In a large pan over medium heat, cook the ground sausage until browned and crumbly.

Add the diced bell peppers and continue cooking until softened then remove from the heat and set aside.

In a large bowl, combine the eggs, Colby jack cheese, and sour cream. Whisk until thoroughly combined.

Add the cooked sausage, peppers and cooked tater tots to the egg mixture. Stir to combine, then transfer to a baking dish.

Bake until the eggs have set and the casserole has started to pull away from the sides of the dish. Serve hot and enjoy!

Recipe Tips

  • This casserole is best served fresh straight from the oven. Use a sharp knife to slice the casserole into squares, or scoop it with a spoon.
  • If you like a little more heat with your eggs, you can add a few drops of tabasco sauce to the egg mixture before adding the sausage and tater tots.
  • I used Colby jack cheese in this recipe. Feel free to swap it out for any other cheese that melts well such as mozzarella, cheddar, gouda, and pepper jack cheese.
  • I like to cook the frozen tater tots in the air fryer. Just follow the directions on the bag.

  • 32 ounce bag tater tots, cooked
  • 1 pound ground sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 large eggs
  • 1 cup sour cream
  • 2 cups Colby Jack cheese

  • Begin by cooking your tater tots if you haven’t already. Set them aside.
  • Preheat your oven to 350°F.
  • While the oven preheats, cook the ground pork in a large pan or skillet until it is browned and cooked all the way through.
