Preheat the oven to 350 degrees and grease a baking dish with nonstick cooking spray.
Combine the water, soy sauce, garlic, ginger, and brown sugar in a large skillet. Cook over medium-low heat, allowing the sauce to simmer for around 5 minutes until thickened.
Remove the pan from heat and add the chicken, rice, and vegetables. Stir to mix.
Transfer the mixture to the prepared pan and bake in the oven for 30 minutes.

To store transfer the leftovers to an airtight container and keep them in the fridge for up to three days.
