Baked Pumpkin Donuts

These Baked Pumpkin Donuts are soft and moist and make the perfect breakfast or dessert. Topped with cinnamon-sugar they are great with a cup of coffee or a tall glass of milk.

As soon as the weather turns cooler I am ready for anything made with Pumpkin.

– 1/2 cup vegetable oil – 3 large eggs – 1 cup light brown sugar, packed – 1 1/2 cups pumpkin puree – 1 1/2 tsp pumpkin pie spice – 1 1/2 tsp salt – 1 1/2 tsp baking powder – 1 3/4 cup plus 2 tbsp flour




Preheat oven to 350 degrees and spray a doughnut pan with baking spray.


Using a standing mixer, beat the vegetable oil, pumpkin puree, and sugar and add in eggs, one at a time, until well combined and smooth.


In a medium bowl, combine the flour, pumpkin pie spice, salt, and baking powder until combined.
