Instant Pot Stuffed Pepper Soup

This Instant Pot Stuffed Pepper Soup is packed with all of the flavors you love in stuffed peppers and it is so easy to make in the pressure cooker.

It’s all the flavors for the same great taste in a soup! Perfect for Fall and winter months.

– 1 lb lean ground beef – 1 onion, diced – 3 tsp garlic, minced – 5 cups beef broth – 3 peppers, diced  – 5 ounces tomato paste – 19 ounce can red kidney beans, drained

INGREDIENTS

– 15 ounce can diced tomatoes – ¾ cup uncooked long grain rice  – 2 tsp Italian seasoning – ¼ tsp dried chili flakes  – grated Parmesan cheese for garnish

STEP 1

 Set Instant Pot to Saute and cook the ground beef. Drain any grease then add onions and garlic and cook until onions are softened.

STEP 2

To avoid the burn notice make sure you Deglaze the Instant Pot after cooking ground beef by adding a little of the beef broth and scraping the bottom with a spatula to remove any brown bits that are stuck.

STEP 3

Add the tomato paste to the beef broth and mix well.
