– 2 tbsp vegetable oil – 1 lb andouille sausage, sliced – 1 ½ lbs red potatoes, cut into bite-sized pieces – 8 ounce package frozen chopped green peppers and onions – ½ tbsp Cajun seasoning – 1 tsp salt – 1 tsp black pepper

STEP 1

Heat one tablespoon vegetable oil over medium heat. When the oil is hot, add the sliced sausage and sauté until browned.
