Cajun Sausage and Potatoes Easy Dinner Recipe
This sausage recipe is a great busy weeknight dish that comes together with minimal cleanup. Just one pan that cooks it all! These are the types of dinners I enjoy making when I'm in a time crunch.
You could pair this dinner with cornbread or homemade dinner rolls, a small salad, raw vegetables and a dip or a side of seasoned green beans. It is very versatile in flavor, so feel free to pair, with any of your favorite sides.
If I'm in a rush I make it a meal in one and skip the sides. Sometimes dinner just needs to be quick and easy.

INGREDIENT LIST
- 1 lb andouille sausage, sliced
- 2 tbsp vegetable oil
- 1 ½ lbs red potatoes, cut into bite-sized pieces
- 8 ounce package frozen chopped green peppers and onions
- ½ tbsp Cajun seasoning
- 1 tsp salt
- 1 tsp black pepper
Variations To Recipe
Alternative to Cajun Seasoning
If you are not a fan of Cajun seasoning or don't have any, no worries. Lemon pepper, season salt, Montreal, garlic with parsley are all tasty seasonings to add flavor to your dish. You could essentially use any spice you like to create a custom dish full of flavors you enjoy.
Types of Potatoes
If you don't have red potatoes, any style of potato will work. I find that russet potatoes cook up nicely as well in the dish.
Add In More Vegetables
Consider tossing in some mushrooms, green beans, zucchini, or any other vegetable you have on hand. It is a great dish to clean out your produce drawer. Just chop, toss in the pan, and let it cook.

What Is Different About Andouille Sausage?
Andouille sausage is more of a chopped sausage with unique spices to flavor the sausage. It is more like a craft sausage that is full of flavor.
Which Is Spicier Andouille Or Chorizo?
When it comes to which is spicier you will find that both have some spice, but chorizo is the clear winner in the spice department. The two sausages also offer different flavors to make them set apart in the flavor department.
How Do You Store Leftovers?
If you happen to have leftovers, you will need to store your leftover mixture in an airtight container in the refrigerator. It will store for up to three days in the refrigerator.
This works well reheated. So you can use leftovers for a quick lunch, or reheat for dinner later in the week. The potatoes will become pretty soft in terms of freezing, so I don't recommend freezing the leftovers.


Cajun Sausage and Potatoes
Ingredients
- 2 tbsp vegetable oil
- 1 lb andouille sausage, sliced
- 1 ½ lbs red potatoes, cut into bite-sized pieces
- 8 ounce package frozen chopped green peppers and onions
- ½ tbsp Cajun seasoning
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Heat one tablespoon vegetable oil over medium heat. When the oil is hot, add the sliced sausage and sauté until browned.
- Remove the sausage from the pan and add the remaining oil. Place the red potatoes and frozen peppers and onions in the pan. Season with Cajun seasoning, salt and pepper.
- Cover the pan and cook for 10 minutes, stirring occasionally.
- When the potatoes have softened, remove the lid and add the sausage back to the pan. Continue cooking for five to 10 minutes, stirring often.
- When the potatoes have begun to brown on the outside, remove from heat and serve immediately.
