Delicious Lime Sheet Cake Dessert Squares

These Lime Sheet Cake Dessert Squares are made from scratch and so moist and delicious. For even more flavor they are topped with lime cream cheese frosting and coconut flakes. The perfect combination of flavors!

Ingredients

- unsalted butter
- granulated sugar
- eggs
- all purpose flour
- salt
- baking powder
- Zest from 1 lime
- lime juice
- lime extract (optional for stronger lime taste)
Frosting Ingredients
- cream cheese
- butter
- powdered sugar
- lime juice
- Zest from 1 lime
Topping
- sweetened coconut flakes
- Zest from 1 lime
How Do You Get Lime Zest?
The zest adds so much flavor to food and is obtained by scraping or grating the outer layer of the lime. Wash your lime thoroughly and then use a grater and slide the lime across it removing the color part of the lime. Avoid the white layer as it will be bitter.
How To Make Lime Sheet Cake
STEP 1: Preheat oven to 350 degrees and prepare a 9x13 baking pan with non stick spray. (I like the Wilton Non-Stick Baking Pan with Lid for easy storage.)
TIP: For easy removal line the pan with parchment paper and lightly coat with non stick spray.
STEP 2: Beat the butter and sugar in a large bowl until combined and fluffy. Mix in the eggs, lime juice, zest and extract (optional). Set aside.
STEP 3: In medium bowl mix together the flour, salt and baking soda. Then slowly add the flour mixture into the wet mixture. Mix until well combined.
STEP 4: Pour into the prepared baking pan. Bake for 20-25 minutes, until the edges are golden brown and a toothpick comes out clean.
Cool completely before frosting.
How To Prepare The Coconut
On a baking sheet spread the coconut out in thin layer and bake at 325 degrees for 5 minutes.
Mix the coconut around and continue baking for 2-4 minutes at a time - mixing in between each time.
Keep a close eye on it so it doesn't burn. You just want it a golden brown color.
Once the coconut is no longer wet and has reached a golden brown color, remove from oven and set aside to cool.
How To Make The Lime Cream Cheese Frosting
Beat together the cream cheese and butter until smooth and creamy in a large bowl.
Mix in the powdered sugar, lime juice and zest until frosting consistency has formed.
Last Step Is Frosting the Cooled Cake
Spread the frosting over the cooled cake. Then top with the toasted coconut and the last of the lime zest.
Cut into 24 squares to serve. Enjoy this delicious cake!
How To Store The Cake
This cake will need to be refrigerated since it is topped with cream cheese frosting. Cover and store for 3 to 4 days in the refrigerator.

Lime Sheet Cake Dessert Squares
Ingredients
- 2 sticks unsalted butter, softened
- 2 cups granulated sugar
- 4 eggs
- 1¾ cup all purpose flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon lime juice
- Zest from 1 lime
- Add 1/2-1 tsp lime extract for a stronger lime taste optional
Frosting
- 8 ounces cream cheese, softened
- 2 Tablespoons butter, softened
- 2 cups powdered sugar
- 2 teaspoons lime juice
- Zest from 1 lime
Coconut Topping
- 1 cup sweetened coconut flakes
- Zest from 1 lime
Instructions
