- Olive Oil - For sautéing.
- Andouille Sausage - Andouille sausage gives it a traditional smoky flavor.
- Chicken Breast - I used boneless, skinless chicken breasts cut evenly into bite sized pieces.
- Red and Orange Bell Pepper - You can use any combination of bell peppers colors you have on hand.
- Yellow Onion - I used a yellow onion but any sweet onion or white onion can be used.
- Garlic - Recipe uses 2 cloves of garlic but you can use more or less depending on your preference.
- Cajun Seasoning - I used store bought Cajun seasoning but you can use a homemade version also. You can also use Creole seasoning.
- Chicken Broth - You can use chicken broth or chicken stock.
- Tomato Sauce - Enrich the flavor of the dish.
- White Rice - Long grain white rice works best.
- Heavy Cream - Adds creaminess.

This recipe is versatile and it's easy to swap out ingredients for what you already have on hand. You could make this recipe with steak or shrimp and use different vegetables such as zucchini, celery and mushrooms.
How To Make Cajun Chicken and Sausage Skillet
Gather all the ingredients and let's start cooking. One of the best things about this easy recipe is that you only need one pan to prepare it!
To start, heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the sliced sausage to the pan and sauté the meat until both sides of the sausage slices are browned.
Remove the sausage from the pan, but leave the browned bits and oil to add flavor to the rest of the ingredients. Add more oil to the pan, then toss in the chicken, bell pepper, onion, garlic, and half the Cajun seasoning. Continue sauteing the ingredients until the chicken is cooked through and the peppers are softened.
Next add the chicken broth, tomato sauce, rice, and the rest of the Cajun seasoning to the pan. Stir to mix everything together, then allow the liquid to simmer until the rice is cooked through. As the rice cooks, it will begin to soak up the liquid in the pan. Be sure to stir the ingredients occasionally to keep them from sticking.
Once the rice is soft and fluffy, add the heavy cream and the cooked sausage to the pan and stir to mix. Allow the cream to simmer for a few minutes to heat through, then serve the creamy Cajun chicken and sausage dish immediately.

To store allow to cool then transfer to an airtight container and store in the refrigerator for up to three days.
Recipe Tips and Variations
- Adjust the spice level. It’s easy to adjust the spice level of this Cajun dinner by adding to or reducing the amount of Cajun seasoning used. If you want it to be less spicy, reduce the seasoning to one tablespoon. And if you want extra spice, try adding more Cajun seasoning or mixing some red pepper flakes into the pan before serving to take the flavor to the next level.
- Make your own Cajun seasoning. Another simple way to adjust the spiciness of your dinner is to prepare your own Cajun seasoning instead of using a store-bought mix. You can make Cajun seasoning at home by combining paprika, garlic powder, onion powder, chili powder, thyme, oregano, and cayenne pepper.
- Add more vegetables. Bell pepper and onion are a delicious addition to this one pot meal. But they’re not the only veggies you can use in this recipe! Try mixing in some other vegetables to round out the meal, like chopped carrots, diced celery, zucchini slices, or peas.
- Try different proteins. In addition to chicken breast, you can also use chicken thighs in this recipe. Another protein option that would make a delicious addition to the dish is shrimp.

Cajun Chicken and Sausage Skillet Recipe
Ingredients
- ½ pound andouille sausage, sliced
- 1 pound chicken breast, cut into bite sized pieces
- 2 Tablespoons olive oil, divided
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 Tablespoons Cajun seasoning, divided
- 2 cups chicken broth
- ½ cup tomato sauce
- 1 cup long grain white rice
- ½ cup heavy cream
Instructions
- Heat one tablespoon olive oil in a large skillet and add the sausage to the pan. Cook for five to seven minutes, until the sausage is browned, then remove it from the pan.
- Add the remaining oil to the pan, along with the chicken, bell pepper, onion, garlic, and one tablespoon Cajun seasoning. Stir and cook until the chicken is cooked through and the vegetables are tender.
- Add the chicken broth, tomato sauce, and remaining Cajun seasoning and stir to mix. Bring the liquid to a boil, then reduce the heat to medium low and add the rice. Stir to mix.
- Continue simmering until the rice is cooked.
- Add the heavy cream and sausage to the pan and stir to mix. Simmer for five to 10 minutes, until the cream is heated through, before serving.
