Ingredient Notes
See printable recipe card below for all ingredients, specific measurements, and complete instructions.
- Cheddar and Pepper Jack Cheese: Shredded cheese melts smoothly into the dip.
- Salsa Verde: Adds a bright, zesty kick to the pepper popper dip.
- Sour Cream and Cream Cheese: Create a rich, creamy base for the dip. Make sure the cream cheese is softened for easy blending.
- Frozen Corn: Adds a sweet, fresh flavor and bit of crunch to the dip.
- Red Bell Peppers: Adds a pop of color and sweet, mild pepper flavor.
- Bacon: Cooked and crumbled bacon adds a smoky, salty flavor that goes perfectly with the cheeses and peppers.
- Jalapenos: Fresh, diced jalapenos bring the heat and classic jalapeno popper flavor to the Crockpot Jalapeno Popper Dip.
- Parsley, Garlic Powder, Dill, Cumin, Red Pepper Flakes: A blend of herbs and spices that enhance the overall flavor of the dip.
How To Make Slow Cooker Jalapeno Popper Dip
Start by gathering all of your ingredients and prepping your veggies. Dice the red bell peppers and jalapenos (removing the seeds for less heat), chop the parsley, and crumble the precooked bacon.
Next, grab your 3-quart slow cooker and add in all of the ingredients. This includes the shredded cheddar cheese, salsa Verde, pepper jack cheese, sour cream, softened cream cheese, frozen corn, diced red bell peppers, crumbled bacon, diced jalapenos, chopped parsley, garlic powder, dill, cumin, and red pepper flakes.
Give everything a good stir to combine the ingredients. Don't worry if it's not completely smooth at this point - the cheese will melt and the dip will come together as it cooks.
Place the lid on the slow cooker and set it to cook on low for 1-2 hours. The exact cooking time will depend on your slow cooker, but you'll know the dip is ready when it's hot, melted, and bubbly around the edges.
About every 30 minutes, give the dip a stir to help the ingredients melt and combine evenly. This will prevent any cheese from sticking or burning on the bottom or sides of the slow cooker.
Once the dip is fully melted and heated through, switch the slow cooker to the "warm" setting to keep the dip at the perfect serving temperature for your guests.
If you like, garnish the top of the dip with more jalapeno slices, red bell pepper pieces, bacon crumbles, or chopped fresh herbs like chives or green onions.
Serve the dip hot with your favorite dippers like tortilla chips, crackers, pretzels, or fresh veggies.
Variations
- Make it meatier. Brown 1/2 pound of ground beef or chorizo and drain any excess grease. Stir the cooked meat into the dip for a heartier, protein-packed version.
- Add beans. Add a can of drained and rinsed black beans to the dip for extra fiber, protein, and texture.
- Add roasted garlic. Roast a whole head of garlic wrapped in foil at 400°F for 30-40 minutes. Squeeze out the soft, caramelized cloves and mash them into the dip for a deep, savory flavor.
Storing and Freezing
Store: If you have any leftover Slow Cooker Jalapeno Popper Dip, transfer it to an airtight container and store it in the refrigerator for up to 3 days. To reheat, microwave individual portions in 30-second intervals, stirring in between, until heated through. You can also reheat larger amounts in a saucepan over low heat, stirring frequently to prevent burning.
Freeze: Unfortunately, this dip does not freeze well, as the cheese and sour cream can separate and become grainy when thawed. For best results, enjoy this dip fresh or refrigerate leftovers for a short time.
Can I make this dip in advance?
Yes, you can assemble the dip ingredients up to 24 hours in advance and store it in the refrigerator until ready to cook. Just keep in mind that you may need to add an extra 30 minutes to the cooking time since the ingredients will be starting out cold.
Recipe Tips
- For a spicier dip, leave some of the jalapeno seeds in or add an extra jalapeno or two.
- If you prefer a milder dip, swap the pepper jack cheese for additional cheddar or use a mild salsa verde.
- Make sure to use softened cream cheese for easy blending and a smooth texture.
- For a thinner dip, add a splash of milk or heavy cream until you reach your desired consistency.
- You can use any size crock pot, but a 3-quart crockpot is the perfect size for this dip.
- To make this dip in the oven, combine all ingredients in a baking dish and bake at 350°F for 20-30 minutes, or until hot and bubbly.
Serving Suggestions
This slow cooker jalapeno popper dip pairs well with all sorts of dippers, from fresh veggies like carrot sticks, celery, and sliced bell peppers to heartier options like soft pretzels, crostini, or even mini cornbread muffins.
