This Slow Cooker Vegetable Beef Soup is full of flavor and is the perfect comfort food to chase away the winter blues!
The bag of frozen mixed vegetables I use has carrots, corn, peas and green beans. You can use whatever frozen mixed vegetables your family likes.
Slow Cooker Vegetable Beef Soup Recipe
1 pound ground beef, browned and drained
3 potatoes, peeled, rinsed and diced
2 (15 ounce) cans of diced tomatoes
1 (10.75 ounce) can of tomato soup
1 (12 ounce or 16 ounce) bag frozen mixed vegetables
1 teaspoon of sugar
Salt and pepper to taste
Brown the ground beef and drain the grease.
Add the diced potatoes to the bottom of slow cooker.
Pour in the diced tomatoes and tomato soup.
Add the cooked ground beef, mixed vegetables and teaspoon of sugar.
Salt and pepper to taste. Add 1/4 cup to 1/2 cup of water. (Depending on how soupy you want it.) Mix well.
Cover and cook on LOW for 8 hours.
Serve with homemade cornbread, biscuits, rolls or crackers.
