Taco Skillet Dinner
Taco Skillet Dinner is a delicious low carb meal when served in a bowl. Made with lean ground beef, Mexican blend cheese, green peppers, tomatoes, avocado's and black olives.
How To Serve This Skillet Dinner
You can easily serve this up in a bowl and top with your favorite toppings. Or you can serve it over Mexican rice or Cauliflower rice for low carb option.
You can also add a scoop of this to a tortilla which makes it very kid friendly.
If you want to include a side dish this recipe is great served with a side of refried beans or black beans and Mexican style corn. You can also serve with tortilla chips and salsa.
Ingredients
1 ½ to 2 ½ pounds lean ground beef
1 onion, chopped
1 green bell pepper, seeded and chopped
2 to 3 tablespoons taco seasoning
1 cup water
2 cups shredded Mexican blend cheese, divided
1 cup sour cream
1 tomato, diced
1 avocado, diced
2 tablespoons chopped cilantro
Sliced black olives, optional
How To Make Taco Skillet Dinner
In a large skillet, brown ground beef. Remove from skillet but keep warm. If the oil is excessive, remove all but 1 tablespoon.
Add onions and green bell pepper to skillet. Cook, stirring often, over medium-high heat for about 2 minutes.
Return beef to skillet. Add seasonings and water. Bring to a boil and reduce heat to medium-low. Simmer for about 20 minutes or until liquid has evaporated.
Stir in 1 cup cheese and sour cream until blended. Top with additional cheese and remove from heat.
Once cheese has melted, add additional toppings such as diced tomato, diced avocado, chopped cilantro, and sliced black olives.
