I like to serve these Stuffed Peppers with a side of re-fried beans mixed with salsa, sour cream and shredded cheese. They are so good and perfect for scooping with tortilla chips.

Variations and Tips For Fajita Chicken Stuffed Peppers
This recipe is easy to change up to your preferences. You can use white, brown or Spanish rice. You can use all green peppers or change it up and with red, green and yellow peppers.
If you didn't want to use Chicken, you can use hamburger meat instead. You can add black olives or diced jalapenos to spice it up.
Chicken Fajita Stuffed Peppers Ingredients
2 boneless, skinless chicken breasts cut into strips
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
Juice of one lime
1 small onion, sliced into thin strips
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
4 green bell peppers, cut in half
1 cup white rice, cooked (can use brown rice or Spanish rice)
1 cup shredded Mexican blend cheese
How To Make Chicken Fajita Stuffed Peppers
Preheat oven to 400 degrees. Cut the bell peppers in half, lengthwise, and remove all the seeds and membrane. Place halved green bell peppers in a baking dish.
Cook chicken in a large skillet over medium heat. Season with paprika, chili powder, cumin, salt, and lime juice.
While the chicken is cooking, prepare rice according to the package directions and set aside.
When the chicken is almost cooked, add in onion, red bell pepper, and yellow bell pepper. Saute until vegetables are cooked through.
Add rice to pan and stir to mix all ingredients together. Fill each green bell pepper half with chicken mixture. Top with shredded cheese.
Place pepper halves in the oven and cook for 30 minutes (longer for softer peppers).
