Easy To Make No Bake Berry Cheesecake With Pretzel Crust

This is a easy holiday dessert to take for Memorial Day, Fourth of July or any social event. Full of flavor and all the patriotic colors to celebrate the holidays.

It's a dessert made with cream cheese that is not baked. It's refrigerated and served cold.

Variations and Substitutions

  • Drizzle with white chocolate or use dark chocolate if you prefer.
  • Top with coconut flakes for more flavor.
  • If you don't have Strawberries and Blueberries substitute with Raspberries and Blackberries.
  • Add chocolate chips to the cheesecake layer.

How To Make Berry Cheesecake With Pretzel Crust

STEP 1: Start by making the crust. In a food processor crush gluten free pretzel sticks. In a medium bowl combine the crushed pretzels, melted butter, and brown sugar and stir until the pretzels are coated.

STEP 2: Press the pretzel mixture into the bottom of a 9x13 pan.

STEP 3: To make the cheesecake combine the cream cheese, sugar, heavy whipping cream, vanilla, and salt in a large mixing bowl. Beat until smooth.

TIP: Make sure the cream cheese is at room-temperature before mixing.

STEP 4: Spread the cheesecake mixture on top of the pretzel crust and smooth with a spatula.

You can melt chocolate on the stove over low heat in a double boiler or in the microwave in a microwave safe bowl on 50% power level.

  • 2- 8 ounce packages cream cheese, room temperature
  • ½ cup sugar
  • ¾ cup heavy whipping cream
  • 1 teaspoon vanilla
  • ¼ teaspoon salt

  • 1 cup fresh blueberries
  • cup melted chocolate

  • 3 cups gluten free pretzel sticks
