How To Make Berry Cheesecake With Pretzel Crust
STEP 1: Start by making the crust. In a food processor crush gluten free pretzel sticks. In a medium bowl combine the crushed pretzels, melted butter, and brown sugar and stir until the pretzels are coated.
STEP 2: Press the pretzel mixture into the bottom of a 9x13 pan.
STEP 3: To make the cheesecake combine the cream cheese, sugar, heavy whipping cream, vanilla, and salt in a large mixing bowl. Beat until smooth.
TIP: Make sure the cream cheese is at room-temperature before mixing.
STEP 4: Spread the cheesecake mixture on top of the pretzel crust and smooth with a spatula.
STEP 5: Next top the cream cheese mixture with strawberries and blueberries.
STEP 6: Drizzle melted chocolate on top of the berries.
Chill for minimum of 4 hours before serving.

You can melt chocolate on the stove over low heat in a double boiler or in the microwave in a microwave safe bowl on 50% power level.

- ½ cup sugar
- ¾ cup heavy whipping cream
- 1 teaspoon vanilla
- ¼ teaspoon salt

- 1 cup fresh blueberries
- ⅓ cup melted chocolate
