Can I Use Any Color Bell Peppers?
Yes you can. You can use different colors or use all the same. Green bell peppers have a slightly more bitter, tangy taste. Red, yellow and orange bell peppers have more of a sweet taste.

1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon smoked paprika

How To Make Instant Pot Taco Stuffed Bell Peppers
1. Start by prepping your bell peppers. Remove the tops, core, and seeds from each one.
2. Pour water into pressure cooker liner. Add the trivet over the water.
3. In the large bowl, add ground beef, seasonings, onion, garlic, and ½ cup cheese.
4. Blend together well with hands. Divide into equal portions according to the number of bell peppers.
5. Stuff the meat mixture into each bell pepper. Position bell peppers on the trivet inside the electric pressure cooker.
6. Close the pressure cooker and set the value to sealing. Set the pressure cooker to manual or pressure cook on high for 8 minutes. When the cycle is complete, allow the electric pressure cooker to release naturally for 6 to 8 minutes before quick release.
7. Top each pepper with remaining cheese and cover until melted.
8. Carefully remove the bell peppers from the pressure cooker, allowing any excess liquid in the peppers to pour back into the pot. (Long handled tongs are especially useful.)
