Serve these Instant Pot Taco Stuffed Bell Peppers for a delicious easy dinner. A blend of Mexican spices and ground beef stuffed into bell peppers and topped with cheese.

These stuffed bell peppers do not have rice and make a great low carb meal. Serve with your favorite toppings.

This is also great served over cauliflower rice or you can use white or brown rice if you are not watching your carbs.

These Taco Stuffed Bell Peppers are packed with flavor. The bell pepper flavor combined with the meat and seasoning are the perfect combination.

Tips and Substitutions For Stuffed Bell Peppers

  • Instead of shredded fiesta blend cheese you can use shredded pepper jack cheese or your favorite cheese blend.
  • You can substitute and use ground turkey instead of ground beef.
  • For more variety add in corn or black beans.
  • Add a can mild chopped green chilies for extra flavor.

Can I Use Any Color Bell Peppers?

Yes you can. You can use different colors or use all the same. Green bell peppers have a slightly more bitter, tangy taste. Red, yellow and orange bell peppers have more of a sweet taste.

I like to use a variety of bell peppers and everyone can pick their favorite.

4 to 6 medium bell peppers
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
1 ½ cups water
1 ½ pounds lean ground beef
1 onion, finely diced
2 cloves garlic, minced
1 cup shredded fiesta blend cheese, divided

How To Make Instant Pot Taco Stuffed Bell Peppers

1. Start by prepping your bell peppers. Remove the tops, core, and seeds from each one.

2. Pour water into pressure cooker liner. Add the trivet over the water.

3. In the large bowl, add ground beef, seasonings, onion, garlic, and ½ cup cheese.

4. Blend together well with hands. Divide into equal portions according to the number of bell peppers.

5. Stuff the meat mixture into each bell pepper. Position bell peppers on the trivet inside the electric pressure cooker.

6. Close the pressure cooker and set the value to sealing. Set the pressure cooker to manual or pressure cook on high for 8 minutes. When the cycle is complete, allow the electric pressure cooker to release naturally for 6 to 8 minutes before quick release.

7. Top each pepper with remaining cheese and cover until melted.

8. Carefully remove the bell peppers from the pressure cooker, allowing any excess liquid in the peppers to pour back into the pot. (Long handled tongs are especially useful.)

Serve with chopped cilantro, limes, sour cream, salsa, avocado, or your favorite taco toppings.
