These Red Velvet Sandwich Cookies are made from a red velvet cake mix and are quick and easy to make.
These cookies combine two of my favorites; Red Velvet cake and cream cheese! Perfect for any special occasion or holiday treat!
If you want to make these for Valentine's Day use a heart shape cookie cutter and cut them into a heart shape before adding the cream cheese center and you'll have a cute Valentine's Day dessert.
These are so delicious you'll want to make them year round with varies cake flavors. Mix it up by using different flavors of cake mix such as chocolate, lemon, strawberry or whatever is your favorite.
Let's get to baking!
First step is to preheat your oven to 375 degrees and line a baking sheet with parchment paper.
Next you'll need a large blow to add the cake mix, 1/2 cup butter, and 2 eggs. Mix together with a hand mixer. Then drop cookie dough by rounded spoonfuls onto the parchment paper. Bake 10-11 minutes.
While the cookies are baking mix together 1/2 cup butter, cream cheese, and vanilla until fluffy in a large bowl. Then slowly mix in powdered sugar.
Once cookies are cooked and cooled, pipe icing onto one cookie and top with another cookie. Be sure to flip the cookies over so you have a flat surface on both sides of the icing.
Hold cookies sideways and rotate to sprinkle with fun Valentines Day sprinkles. Enjoy!

Ingredients
- 1 box red velvet cake mix
- 1 cup butter, divided
- 2 eggs
- 3 1/2 cups powdered sugar
- 2 tsp vanilla
- 8 oz. cream cheese
- Valentines Day sprinkles
Instructions
