You can make this homemade vegetable soup with only a few simple ingredients. To make this recipe, you’ll need:

  • Onion - I like to use a yellow onion but you can also use a white onion. The onion adds flavor to the vegetable soup.
  • Potatoes - Yukon gold potatoes, Russet potatoes or red potatoes can be used in this soup.
  • Diced tomatoes - You can use regular diced tomatoes or for more flavor use fire-roasted diced tomatoes.
  • Frozen mixed vegetables - Use your favorite blend of frozen mixed vegetables.
  • Minced garlic - To save time I used jarred minced garlic.
  • Italian seasoning - Adds the perfect balance of flavor to the soup.
  • Vegetable broth - Base of the soup and adds flavor. You can use store-bought vegetable broth or homemade.

Preparing homemade vegetable soup is quick and easy with the help of your slow cooker! Just prep the ingredients and toss them in the crockpot, then let the slow cooker do all the hard work for you. Follow these simple instructions to make your own vegetable soup at home.

How To Make Slow Cooker Vegetable Soup

Before you can start cooking your soup, you’ll need to take a few minutes to prep all the ingredients. Start by finely chopping your onion. Then, peel and dice the potatoes.

Add the onion and potato to the bowl of your slow cooker, along with the diced tomatoes, frozen mixed vegetables, minced garlic, Italian seasoning, and vegetable broth. Stir to mix all the ingredients together until they’re well combined.

Place the lid on top of the crockpot and set it to cook. You can cook the soup on low for 8 hours or high for around 5 to 6 hours. Before serving your vegetable soup, stir to combine all the ingredients together.

Soup Variations

In addition to customizing the type of vegetables you use in your own soup recipe, there are a variety of other ways you can change up this easy meal to make it your own! Try these other recipe ideas to create a delicious bowl of soup for your family.

  • Add some meat. This recipe is a great option for a meat-free meal. But that doesn’t mean you can’t add some protein to it if you prefer to enjoy your soup with meat. Add diced chicken, stew meat, beef, ground beef, or ground turkey to the recipe.
  • Mix in some beans. You can keep this a vegetarian meal and still add some extra protein to the recipe with the help of beans. A variety of beans would be delicious in this vegetable soup, including lima beans, kidney beans, pinto beans, and great northern beans.

Storing, Freezing, and Reheating

Can I use fresh vegetables instead of frozen?

Ingredients
  

  • 1 small onion (finely chopped)
  • 3 medium potatoes (peeled and diced)
  • 15 ounce can diced tomatoes (with juice)
  • 12 ounce bag frozen mixed vegetables
  • 2 teaspoons minced garlic
  • 1 Tablespoon Italian seasoning
  • 32 ounce container vegetable broth
  • 14.5 ounce can vegetable broth

Instructions
 

  • Finely chop the onion and dice the potatoes.
  • Add them to a 6-qt or larger slow cooker. Then add the frozen mixed vegetables, diced tomatoes, garlic, and Italian seasoning. Pour in the vegetable broth and stir.
  • Place the lid on the slow cooker and cook on low for 8 hours or high for 6 hours.
  • Once cooked, stir and taste the soup and adjust the seasoning if needed.
  • Serve and enjoy!
