I like to serve these breakfast potatoes with some scrambled eggs and homemade pancakes. They also work great as a base to a breakfast hash, breakfast burrito or served as a side to this Meaty Breakfast Casserole or Western Omelet Roll.
These air fryer potatoes are also delicious added to tacos or served with Air Fryer Hamburgers. They are so versatile and delicious served as a side for breakfast, lunch or dinner.

- Russet Potatoes - Washed and diced. You can leave the peel on or off. Either way will work.
- Olive Oil - Can be substituted with canola oil or vegetable oil.
- Garlic Powder - Adheres to the potatoes better than freshly minced garlic.
- Black Pepper - Freshly ground black pepper.
- Sea Salt - Enhances the flavor of the other spices as well as the potatoes themselves.
- Paprika - Regular or smoked paprika
- Onion Powder - Adds a sweet hint of onion flavor.
Recipe Variations
- Vegetables - Add in some chopped green or red bell peppers and onions for more flavor.
- Spicy - For spicier potatoes add in chili powder, red pepper flakes or a pinch of cayenne.
- Loaded - Make them loaded potatoes by topping with bacon, cheese and sour cream for some delicious comfort food.
How To Make Air Fryer Breakfast Potatoes
- Wash your potatoes and pat them dry before dicing them.
- Preheat your air fryer while you toss all of the ingredients together in a large bowl.
- Use your hands or a large spoon to mix the ingredients until the potatoes are evenly coated in the spices.
- Transfer the potatoes to the air fryer and cook until they are crispy on the outside and tender on the inside.

Recipe Tips
- These potatoes cook to a beautiful crisp on the outside and remain nice and soft on the inside.
- You can make the potato pieces as large or as small as you would like. We generally cut ours small but like to keep them chunkier every once in a while. You may need to increase the cook time by a few minutes for larger pieces to ensure they soften on the inside.
- Try to cut your potatoes into equal size portions, so they all cook up evenly.
- We like to use smoked paprika to give the potatoes some added flavor and depth, but regular paprika works wonderfully.
- Other spices that go well with these potatoes include dill and parsley.
- Keep in mind that cooking times may vary depending on your model of air fryer.
How To Store and Freeze
Once cooled you can store your leftover breakfast potatoes in an air tight container in the refrigerator for up to 4 days. You can also place them in a freezer safe container and store them in the freezer for up to 2 months.
How To Reheat: Reheat refrigerated potatoes in the air fryer for 4 to 5 minutes at 390°F or you can reheat in the oven. I don't recommend reheating in the microwave if you want them to stay crispy. Reheat frozen potatoes in the air fryer for 13 minutes at 390°F.

Air Fryer Breakfast Potatoes Recipe
Ingredients
- 5 small to medium sized Russet Potatoes, diced
- 2 Tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon sea salt
- 1 teaspoon paprika
- ½ teaspoon onion powder
Instructions
- Preheat your air fryer for 5 minutes at 390°F.
- Wash your potatoes and pat them dry, then dice them.
- Combine all of the ingredients in a large mixing bowl.
- Use a wooden spoon or your hands to fold the ingredients together until the diced potatoes are evenly coated in the spice mixture and oil.
- Transfer the coated potatoes to the air fryer basket and cook for 17 minutes at 390°F, or until crispy on the outside; shaking halfway through cook time.
- Serve and enjoy!
