Cranberry Pecan Muffins
Muffins are the perfect breakfast to have on hand for busy mornings when you don't have time to cook. They are also great for weekend mornings when you have lots of kids activities to get to or to serve as a quick breakfast before church.

Cranberry Pecan Muffins Ingredients
2 cups flour
1/2 cup brown sugar, packed
1 tablespoons baking powder
1/2 teaspoon salt
6 ounce package of dried cranberries
1/2 cup of pecans, chopped
1 cup milk
4 tablespoons butter, melted
2 large eggs
How To Make Cranberry Pecan Muffins
1. Preheat oven to 400 degrees.
2. Grease a muffin tin.
3. Whisk dry ingredients (flour, sugar, baking powder, salt) together in a large bowl. Mix in cranberries and pecans
4. Whisk milk, butter, and eggs together in a medium bowl.
5. Pour the wet ingredients into the bowl of the combined dry ingredients.
6. Gently use a spatula to mix the wet and dry ingredients until just combined. (lumps are okay)
7. Pour batter into muffin tin until cups are just over 2/3 full.
8. Allow batter to sit for 5 minutes.
9. Bake for 18-20 minutes.
10. Remove from pan and allow to cool.
Tips And Variations For Making Cranberry Pecan Muffins
- Add 1/2 cup of dark Chocolate Chips.
- Use Walnuts instead of Pecans.
- Toast the pecans for a deeper flavor.
