2 cups flour
1/2 cup brown sugar, packed
1 tablespoons baking powder
1/2 teaspoon salt
6 ounce package of dried cranberries
1/2 cup of pecans, chopped
1 cup milk
4 tablespoons butter, melted
2 large eggs

Easy Cranberry Pecan Muffins

How To Make Cranberry Pecan Muffins

1. Preheat oven to 400 degrees.
2. Grease a muffin tin.
3. Whisk dry ingredients (flour, sugar, baking powder, salt) together in a large bowl. Mix in cranberries and pecans
4. Whisk milk, butter, and eggs together in a medium bowl.
5. Pour the wet ingredients into the bowl of the combined dry ingredients.
6. Gently use a spatula to mix the wet and dry ingredients until just combined. (lumps are okay)
7. Pour batter into muffin tin until cups are just over 2/3 full.
8. Allow batter to sit for 5 minutes.
9. Bake for 18-20 minutes.
10. Remove from pan and allow to cool.

Tips And Variations For Making Cranberry Pecan Muffins

  • Add 1/2 cup of dark Chocolate Chips.
  • Use Walnuts instead of Pecans.
  • Toast the pecans for a deeper flavor.

  • 2 cups all purpose flour
  • 1/2 cup brown sugar, packed
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 ounce package of dried cranberries
  • 1/2 cup pecans, chopped
  • 1 cup milk
  • 4 tbsp butter, melted
  • 2 large eggs

Instructions
 

  • Preheat oven to 400 degrees.

  • Mix in cranberries and pecans into dry ingredients.
  • Whisk milk, butter, and eggs together in a medium bowl.

  • Bake for 18-20 minutes.
