This S'mores Ice Cream Sandwich Cake is a big hit in our house, especially during summer. My kids are crazy about s'mores - the gooey marshmallows, melted chocolate, and crunchy graham crackers. But let's be honest, no one wants to sit around a fire when it's blazing hot outside. That's where this cake comes in handy.

  • Frozen Whipped Cream Topping - This makes assembly quick and easy. You can use homemade whipped cream if you prefer.
  • Cocoa Powder - Adds a rich chocolate flavor. Dutch-processed cocoa works well here.
  • Marshmallow Fluff - Gives that classic s'mores taste. 
  • Graham Crackers - Crush them up for that authentic s'mores crunch. You can use a food processor or just put them in a bag and crush with a rolling pin.
  • Mini Marshmallows - These add extra texture and that classic s'mores look. You can toast them lightly with a kitchen torch for more flavor.
  • Hershey's Bars - The traditional s'mores chocolate. Feel free to use your favorite chocolate bars instead.

How To Make S'mores Ice Cream Sandwich Cake

First, grab a large mixing bowl. We're going to start by combining the whipped topping and marshmallow fluff. Mix these together until they're well blended.

Now, divide this mixture in half. To one half, we're adding the cocoa powder. This gives us that rich chocolate flavor that's so important in s'mores. Mix it in well until you've got a smooth chocolate cream.

Time to start layering! Unwrap your ice cream sandwiches and start lining them up in a 9x13 pan. You might need to cut one or two to fit them all in - that's totally fine. This is your base layer.

Next, spread that chocolate cream mixture you made over the ice cream sandwiches. 

Now, repeat the process with another layer of ice cream sandwiches. This double layer is what makes this cake so impressive when you cut into it.

Spread the remaining plain whipped topping mixture over this second layer of sandwiches. 

Next, add the toppings. Sprinkle your crushed graham crackers, mini marshmallows, and chopped up Hershey's bars all over the top. Don't be shy - the more, the merrier!

Cover the dish loosely with foil and pop it in the freezer. It needs about 4 hours to set up properly. When you're ready to serve, a warm knife will give you clean slices. Just dip your knife in warm water before cutting.

Make Ahead: This cake is perfect for making ahead of time. You can assemble the entire cake the day before you plan to serve it. Just keep it well-covered in the freezer until you're ready to enjoy.

Ingredients
  

  • 24 ice cream sandwiches
  • 16 ounces frozen whipped cream topping, thawed and divided
  • ¼ cup cocoa powder
  • 1 cup marshmallow fluff
  • ½ cup crushed graham crackers
  • 1 cup mini marshmallows
  • 2 full size Hershey’s bars, roughly chopped

Instructions
 

  • In a large mixing bowl, mix together the whipped topping and marshmallow fluff. Divide the mixture in half and add ¼ cup cocoa powder to one half until well combined. Set aside.
  • Unwrap and line 12 of the ice cream sandwiches into the bottom of a 9x13 pan (you may need to slice one or two sandwiches to fit all into the pan).
  • Use a spatula to spread the cocoa whipped cream topping over the ice cream sandwich layer.
  • Repeat with the remaining ice cream sandwiches.
  • Spread the remaining half of whipped topping across the sandwiches
  • Sprinkle the crushed graham crackers, mini marshmallows, and broken-up Hershey bars across the top of the cake. Cover the dish loosely with foil and place it into your freezer for 4 hours before serving.
  • Slice in squares to serve, enjoy!
