The fudgy chocolate base tastes like an actual brownie, and then you have a sweet caramel icing dripping down the sides and crunchy pecans on top.

These come together in about half an hour, which means you can have warm, chocolatey donuts ready faster than you’d think. The combination of cocoa powder and melted chocolate chips makes them extra rich, and they’re just as good for dessert as they are with your morning coffee.

These donuts are fantastic with a cup of coffee in the morning. They’re also great for brunch when you have people over because they look impressive but don’t require much effort. 

The caramel and pecan combo reminds me of those turtle candies, which is probably why I can’t stop at just one. I like to make a full batch and keep them covered on the counter so we can grab one whenever we want something sweet. They stay moist for a few days, though they usually don’t last that long around here!

  • All-Purpose Flour: I spoon it into my measuring cup and level it off to make sure I don’t pack in too much.
  • Unsweetened Cocoa Powder: Dutch-process or natural cocoa both work fine. This gives you that deep chocolate flavor.
  • Light Brown Sugar: The molasses in brown sugar adds moisture and a hint of caramel flavor that works perfectly with the icing. Make sure to pack it into your measuring cup.
  • Baking Powder: This helps the donuts rise and get that nice texture. Check that yours is fresh so they bake up properly.
  • Unsalted Butter: I melt mine in the microwave for about 40 seconds. Unsalted is best so you can control the flavor.
  • Semi-Sweet Chocolate Chips: These melt right into the warm butter and add even more chocolate richness. You could use milk chocolate if you want them sweeter.
  • Eggs: You’ll need 2 large eggs at room temperature. They mix into the batter more smoothly that way.
  • Powdered Sugar: This is for the icing and creates that smooth, sweet glaze that drips down the sides.
  • Caramel Sauce: Use store-bought caramel sauce or make your own if you’re feeling ambitious. It gives the icing that turtle candy flavor.
  • Heavy Cream: This thins out the icing to the perfect consistency. Start with 4 tablespoons and add a bit more if you need it thinner.
  • Chopped Pecans: Toast them first if you want extra flavor, or use them straight from the bag. You can also swap in walnuts if that’s what you have.

How To Make Caramel Pecan Brownie Donuts

Start by heating your oven to 350°F and spraying 10 cavities of your donut pan with cooking spray.

In a large bowl, whisk together the flour, cocoa powder, brown sugar, and baking powder. This helps everything mix evenly so you get consistent donuts.

Melt your butter in a small microwave-safe bowl for about 40 seconds. Add the chocolate chips to the hot butter and stir until they’re completely melted. The heat from the butter does all the work.

Pour the chocolate mixture into your dry ingredients, then add the eggs. Whisk until the batter is smooth and you don’t see any flour streaks.

Spread the batter evenly into your prepared donut pan. Try to get about the same amount in each cavity so they bake evenly.

Bake for 18 minutes, or until a toothpick inserted into one of the donuts comes out clean. Let them cool in the pan for a minute, then carefully turn them out onto a wire rack to cool completely before icing.

While the donuts cool, make your icing. Mix the powdered sugar, caramel sauce, and heavy cream in a small bowl until smooth.

Spread the icing over the tops of your cooled donuts and let it drip down the sides. Sprinkle the chopped pecans on top right away before the icing sets, and you’re ready to enjoy!

Storing and Freezing

Store: Keep your Caramel Pecan Brownie Donuts covered at room temperature for up to 3 days. They stay moist and fudgy the whole time. If you’ve already added the icing and pecans, they’ll soften a bit as they sit, but they still taste delicious.

Freeze: These donuts freeze well for up to 2 months. Let them cool completely, then wrap each one individually in plastic wrap and place them in a freezer bag. I recommend freezing them before you add the icing and pecans. 

When you’re ready to eat them, let them thaw at room temperature for about an hour, then make fresh icing and add your pecans. If you’ve already iced them, they’ll still freeze fine, but the texture of the icing might change slightly when thawed.

Substitutions and Variations

  • Try different toppings. Swap the pecans for walnuts, almonds, or even toffee bits for a different crunch.

  • Add espresso powder. Stir 1 teaspoon into your dry ingredients to make the chocolate flavor even deeper.
  • Use dark chocolate. Swap the semi-sweet chips for dark chocolate if you prefer a less sweet, more intense chocolate flavor.

Recipe Tips

  • Don’t skip the cooling time before icing. If your donuts are even slightly warm, the icing will melt right off and you’ll lose that beautiful drip effect.
  • Make sure your chocolate chips are fully melted into the butter. Any chunks will create lumps in your batter.
  • Use a spoon or a piping bag to fill your donut pan. Either way works fine, just try to keep the amounts even so they all bake at the same rate.
  • Let the donuts cool in the pan for just a minute before removing them. If you try to take them out too soon, they might break apart.
  • Start with the amount of heavy cream listed in the icing, then add more if needed. It’s easier to thin out icing than to thicken it back up.
  • Sprinkle the pecans on right after you ice each donut. Once the icing starts to set, the pecans won’t stick as well.
  • If your icing gets too thick while you’re working, just stir in a few drops of cream to loosen it back up.

Can I make these without a donut pan?

You can bake these in a muffin tin instead. Fill the cups about two-thirds full and bake for 15-17 minutes. They’ll be more like brownie muffins than donuts, but they’ll still taste amazing with the caramel icing.
