This Loaded Mashed Potatoes recipe is a creamy goodness of cheddar cheese, bacon, sour cream and more!
Mashed potatoes are one of my favorite side dishes. I could eat them everyday. This is a delicious loaded mashed potato recipe and it's easy to make.
This recipe is very versatile. You can use bacon or use bacon bits. I love it with cheddar cheese but you can use pepper jack cheese if you want something a little bit spicy.
With this recipe you can add the cheese, bacon, sour cream and green onions as a topping or mix them in the mashed potatoes. I like to add them on top of the potatoes that way everyone can add their favorite toppings and leave out what they don't like.
I like lots of cheese and bacon but I leave out the green onions. My husband likes all the toppings so he mixes everything in.

Loaded Mashed Potatoes Recipe
Gather your ingredients and let's start cooking! You'll need 6 large russet potatoes, sour cream, milk, butter, seasonings, green onions, bacon or bacon bits and Cheddar cheese.
Chop potatoes into cubes. No need to peel them but you can if you prefer them peeled. We like to leave the potato skins on. Boil for 15-17 minutes until potatoes begin to soften and fall apart. Drain.
In a large bowl combine potatoes, sour cream, milk, butter, salt, garlic powder, and pepper.
Mix potatoes to your desired consistency (smooth or chunky).
Top with a dollop of sour cream, fresh chopped green onions, bacon or bacon bits, and Cheddar cheese or you can blend the toppings in with the mashed potatoes if you prefer.
Easy Loaded Mashed Potatoes
Ingredients
- 6 large russet potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 4 tbsp butter
- 1 tsp salt
- 2 tsp garlic powder
- 1/2 tsp black pepper
- 1 cup green onions, chopped
- 1/2 cup bacon or bacon bits
- 1 cup shredded cheddar cheese

- Boil for 15-17 minutes, until potatoes soften and begin to fall apart.
- Drain potatoes.
