- Cornstarch - Helps to thicken the gravy.
- Salt and pepper to taste.
This dump-and-go main course is quick enough for a weeknight dinner but hearty enough for a Sunday meal. But the best part about this slow cooker recipe is how simple it is to prepare! Just follow these easy instructions for cooking your beef tips at home.
How To Make Slow Cooker Beef Tips
Start by preparing the sirloin by cutting the larger piece of meat into bite-sized pieces. This will help the meat cook faster, allowing it to get tender more quickly.
Add the beef cubes to the bowl of your slow cooker and season with salt and pepper. Then, top the meat with chopped onions.
After that, whisk the gravy together by combining the beef broth, Worcestershire sauce, minced garlic, Italian seasoning, and cornstarch.
When all the gravy ingredients are well mixed, pour the sauce over the top of the beef and onion. Lightly press the beef pieces into the sauce to make sure they’re all submerged.
Place the lid on the slow cooker and set it to cook on high for six hours or low for three hours. The beef tips are ready to serve when the meat is tender, and the gravy has thickened.
How Do I Thicken Gravy in the Slow Cooker?
A delicious part of this slow cooker recipe is the flavorful gravy that coats the beef tips. Since this recipe is made with cornstarch, it should thicken as the recipe cooks in the Crockpot. But if it doesn’t, here are a few things you can do to help your gravy thicken.
- Turn up the heat. One simple way to help the gravy thicken is to turn up the heat in the slow cooker. Turn the dial to high and replace the lid. Allow the liquid to simmer for another 15 to 20 minutes to help the sauce thicken.
- Add more cornstarch. You can also help the gravy thicken more quickly by adding more cornstarch. Combine two tablespoons of cornstarch with two tablespoons of cold water, then pour the slurry mixture into the crockpot. Replace the lid and cook on high for 15 to 20 minutes to allow the gravy to thicken.
- Transfer it to a saucepan. If the gravy hasn’t thickened with the crockpot on high, it may not get hot enough for the sauce to thicken correctly. If that’s the case, remove the beef cubes from the gravy and transfer the liquid to a saucepan. Cook over medium heat and allow the gravy to simmer until thick.
How to Store And Reheat
If you have any leftovers, they should be stored in the refrigerator. Transfer the leftover beef tips and gravy to an airtight container and refrigerate it for up to three days.
You can reheat the beef in the microwave or a saucepan over medium-low heat until the meat is heated through.

- With vegetables on the side. Skip the carbs and serve your beef tips and gravy with your favorite vegetables on the side. This main course will pair well with carrots, broccoli, cauliflower, and green beans.
