How To Make Blueberry Banana Bread

Start by preheating your oven to 325°F (165°C) and greasing a 9x5 inch loaf pan with butter or cooking spray.

In a small mixing bowl, whisk together the flour, baking soda, cinnamon, and salt until well combined. Set this mixture aside while you prepare the wet ingredients.

In a larger mixing bowl, beat the eggs, sugar, oil, and vanilla extract together until smooth and creamy. You can use an electric mixer for this step, or just whisk vigorously by hand.

Next, add the mashed bananas to the egg mixture and beat until fully incorporated and smooth. If you don't have an electric mixer, you may find it easier to mash the bananas with a fork or potato masher before adding them to the bowl.

Gradually stir the dry ingredients into the wet ingredients until just combined. Be careful not to overmix the batter, as this can lead to a tough, dense bread.

In a separate bowl, toss the blueberries with 1 tablespoon of flour until evenly coated. This step helps prevent the berries from sinking to the bottom of the loaf while baking.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake the bread in the center of the oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

Remove the bread from the oven and let it cool in the pan for 8-10 minutes. Then, run a butter knife or offset spatula around the edges of the loaf to loosen it, and carefully turn it out onto a wire rack to cool completely.
